All olives are hand-picked within the first ten days of November and immediately cold pressed in order to conserve as much as possible the freshness of this early-picked fruit
After pressing, the oil is stored in cool spaces and filtered with cotton pads before bottling, in order to avoid vegetal water deposits which would alter and compromise the taste.
